2004 Melbourne Food & Wine Festival

For 17 days from 19 March, the 2004 Melbourne Food & Wine Festival will nourish, inspire, entertain and educate.

From dinners and demonstrations, to workshops and wine blending, top chefs and tutored tastings, the program is designed for kids to connoisseurs … and just about everyone in between.

To help you digest the feast, we’ve broken it down into bite size pieces.  Take it slowly and chew well. There’s plenty for everyone. Just make sure you leave room for second and third helpings.

THE FIRST WEEKEND

THE MARVELOUS MELBOURNE DINNER 19 March      Lumina at Grand Hyatt

Explore the first hundred years of settlement (1803 to 1903) through food and wine, prepared by a team of chefs led by Adrian Richardson (La Luna) and Henrik Iversen (Grand Hyatt). Guest speaker will be scientist, historian and author Tim Flannery.

VICTORIA’S ULTIMATE CELLAR DOOR AT SOUTHGATE 20 – 21 March

Fifty Victorian wineries will bring their cellar door to the Southgate promenade offering tastings, wine workshops and classes from Australia’s leading wine writers.  Blend your own Mornington Peninsula pinot, enjoy wine dinners featuring everything from cask to posh wines as well as a menu of set price wine lunches at Southgate restaurants.  And to celebrate vintage, there will be a fierce waiters race with a kitty of $2000, the richest prize for a waiters race in Australia.

The weekend is hosted by two of Australia’s leading wine experts and authors – Stuart Gregor (Sunday Herald Sun and Australian Good Taste) and International Wine Communicator Of The Year Max Allen.

COOKING CLASSES FOR CHILDREN AT ARTPLAY NEW EVENT! 20 – 21 March

Leading Aussie cooks and chefs join forces for a program that comprises the hottest cooking classes ever devised for kids at the new Art Play complex in Birrarung Marr along the Yarra.  Guest presenters include Australia’s five most influential cookery writers of the last 50 years including Donna Hay, Stephanie Alexander, Raymond Capaldi from Fenix, Margaret Fulton, Gabriel Gate and Australian Women’s Weekly Food Director Lyndey Milan.

Together this line up of talent has millions of book sales between them and they are united in teaching the next generation about the importance of cooking and sharing good food.

CELEBRATING MARGARET FULTON

She is the Grande Dame of Australian food writers.  Over the last five decades Margaret Fulton has revolutionised how Australians eat. In 2004 the Festival is delighted to celebrate Margaret’s 80th birthday, her 50th year as a food writer and the relaunch of her first cookbook, The Margaret Fulton Cookbook, which has been extensively revamped with new photos by outstanding food photographer Geoff Lung. Exclusive pre-launch copies of the cookbook will available at Margaret’s events during the Festival.

21 March     The Sofitel

Celebrate Margaret’s contribution to Australia’s culinary life with a special tribute dinner where Stephanie Alexander, Donna Hay, Suzanne Gibbs (Margaret's daughter and ex Co-Food Editor of New Idea), Australian Women's Weekly Lyndey Milan and Gabriel Gate select their favourite Margaret Fulton dish from the last five decades and explain why they’ve chosen them. Margaret will also deliver a keynote speech.

A LADIES LUNCH WITH MARGARET FULTON 24 March Le Restaurant at The Sofitel

In this special one off event, Margaret will work with The Sofitel’s Le Restaurant to create some of her favourite dishes from the revamped Margaret Fulton Cookbook and answer questions from luncheon guests.

SPICE BAZAAR AT VICTORIA HARBOUR DOCKLANDS NEW EVENT!
21 – 23 March

The distinctive aroma of cumin, sumak and cinammon will permeate the Festival’s newest event – Spice Bazaar. The Bazaar celebrates the dynamic and colourful food of Asia Minor, North Africa and Spain linked by their common Moorish past.  Experience the buzz of a Fez medina where you’ll be able to buy spices and barter with carpet sellers!  Choose dishes created by chefs from Melbourne’s best restaurants from the region including Greg Malouf (Mo Mo), Frank Camorra (MoVida Bar de Tapas), Shane Delia (Eleonore’s at Chateau Yering), Café Zum Zum, Alaysha, Mazeh, Souk, Nights of Shiraz and Al Nada.

BROWN BROTHERS RESTAURANT WEEK ALWAYS A SELLOUT! 22 – 28 March

Brown Brothers Restaurant Week continues to sell out as many of Victoria’s best restaurants, cafes and bars offer two courses, a glass of Victorian wine and coffee for only $25.

LA CUISINE DU MARCHE NEW EVENT! The Official Festival Dinner at Prahran Market. 24 March

Only 600 people will enjoy the privilege of the Festival’s signature “Market Kitchen” dinner.  Set amongst the bustling market stalls and gleaming produce at Prahran Market, discover how the French continue to seduce our taste buds and join the debate over whether France, Italy, Spain, Japan or Australia has the best food.  

Four great modern French chefs from three continents will interpret bistro classics.  They include France’s Alain Llorca (2 Michelin star chef at Nice's Hotel Negresco), Japan’s Philippe Aubron (protege of Roger Verge and the only gaijin chef in the Geisha district of Tokyo) and from Australia, Philippe Mouchel (soon to open his new signature restaurant at Crown) and Shannon Bennett (Vue De Monde).

Dessert will be a chance to celebrate the great creme brulee makers of Stonnington with each table sharing creme brulees made by Koots, Saucier, Bistro Thierry and Spoonful.  The cheese course will feature winners of the 2004 Grand Dairy Awards.

WORLD’S LONGEST LUNCH (MELBOURNE) ALWAYS A SELLOUT! 26 March At the St Kilda Rd Arts Precinct

This year we celebrate Melbourne’s love of the arts, fine food and wine with a Renaissance Feast that’s been given a 21st century spin. Approximately 1000 people will sit down to a three-course banquet outside the Victorian Arts Centre and NGV International.  They’ll be serenaded by over 30 wandering minstrels.

WORLD’S LONGEST LUNCH IN THE COUNTRY 26 March

Take your pick across 25 wonderful locations in regional Victoria - from the Prime Ministers’ walk in Ballarat, Daylesford’s Wombat Hill Botanic Garden, or the Warrnambool foreshore overlooking Lady Bay to the historic wharf on the Murray at Echuca. Approximately 4000 people across Victoria will sit down for the World’s Longest Lunch, making it the largest lunch in Australia.

Expect to be fed at the Fed Square Weekend where more than 32,000 visitors will
experience the blockbuster weekend of the Festival.

THE CULINARY PRO-AM COMPETITION NEW EVENT!
26 – 27 March      Main Stage, Federation Square

Watch 8 top Melbourne chefs lead a team comprising a celebrity, a journalist and an apprentice, in a budget challenge to cook a two course meal in 60 minutes.  Can they complete the job, including shopping for the ingredients, within the budget and the time?  The event runs over two days.

Leading chefs come together to share what they’ve learnt on their travels.  

Alain Llorca – Head Chef at the two-star Hotel Negresco in Nice.  Alain was trained by Michelin legend Alain Ducasse and is praised as Provence’s most innovative chef.  He is tipped to follow his mentor into three star territory.  

Philippe Aubron – Protégé of and former Head Chef for French culinary legend Roger Verge. Philippe is the only French trained chef cooking in the Geisha district of Tokyo and also starred in the SBS “Iron Chef” TV series.

Philippe Mouchel – Melbourne’s best-loved and most respected chef from France and Japan, returns to his new home in a restaurant on the promenade at Crown.

Ms Ha and Ms Hue – Two of the first graduates from Hanoi Koto Cooking School on which many say Jamie Oliver based the concept for Fifteen (“Oliver’s Army”).  This school was set up by Melbourne chef Tracey Lister and Cabramatta’s Jimmy Pham over four years ago and has since trained over 80 street kids for jobs in Vietnam’s thriving hospitality trade.  The young female duo will cook authentic food from both ends of the country.

Alastair Hendy - Recently won the titles of the ‘World’s Best Food Writer’ and the ‘World’s Best Food Photographer’. He spends most of his life in out-of-the-way corners of the world looking for new food experiences.  He shares culinary experiences of his recent trip to Laos and Burma.

Karen Martini – Originally from Melbourne, Karen divides her time between her award winning Sydney restaurant Icebergs Dining Room at Bondi and The Melbourne Wine Room.

The Age Good Food Guide Young Chef of the Year, George Calombaris (Reserve) joins forces with his granny Mahi Kaili, who is tipped to be the best cook from her village in Cyprus. Together they cook some village favourites and George shows how he might reinterpret these simple dishes in Reserve style.

BREAD 101

Discover how different leavens and flours affect bread with Victoria’s artisan bakers, St Kilda’s Daniel Chirico and Antun Spogelic from La Madre.  Bring along your own homemade loaf and the baker of the best loaf will be invited to Daniel’s bakery for the night to make their bread professionally.

HELL NO, GMO

Food legend Margaret Fulton and one of Australia’s great young chefs Cathy Maguire (Soulmama) join forces to discuss why natural is better and cook their different approaches to organic food.

THE CLASSICS DECONSTRUCTED

Herald Sun Food Editor Kate McGhie and Fenix Chef Raymond Capaldi demonstrate some classic dishes and how the new school of surrealist chefs might deconstruct them.

CELEBRATE THE BEAN COFFEE FESTIVAL NEW VENUE! 28 March Yarra Banks at Federation Square

Now in its third year, the Celebrate the Bean Coffee Festival will draw more than 16,000 coffee aficionados at its new home along the banks of the Yarra at Federation Square. 

This one-day festival celebrates Melbourne’s illustrious cafè culture and lifestyle, showcasing some of the best coffee made by the best baristas. 

Taste coffee from Monte, Gravity, Jasper, Map, Vittoria, Segafreddo, Zanetti and Eureka.  Try some of the best domestic espresso machines from Gaggia, Jura, Krups, Saeco, Sunbeam, Breville and Delonghi.

There’ll be free coffee workshops presented by the William Angliss Coffee Academy; two stages of live entertainment including a state barista competition; and a special new section featuring the Australian Coffee Growers Association cupping Australian blends, plus free chocolate activities for kids at Art Play in Birrarung Marr.

Entrance to Celebrate The Bean is free. Purchase coffee tickets for $1.50 each from the Melbourne Food and Wine Festival stand on the day.

CONNEX HAWKERS’ MARKET 29 – 31 March     Queen Victoria Market

Hawkers’ Market is the people’s event attracting in excess of 14,000 people over three nights.

Melbourne’s top Asian restaurants team with leading Victorian vineyards at the historic Queen Victoria Market to create a bustling and electric atmosphere.  Sample from over 60 Asian dishes at stalls run by Red Emperor, Aya Japanese Restaurant, Khan Mongolian BBQ, the Curry Club and the Nudel Bar.

SPRING VALLEY BREAKFAST ROUND THE TAN 4 April The Royal Botanic Gardens, Melb

The Festival wraps up with a progressive breakfast around the famous ‘Tan’ track edging Melbourne’s beautiful Botanic Gardens. This event attracts over 4,000 people who love to walk, absorb the views, have fun, and of course eat and drink. Dogs on leads are welcome too.
