Carole Kotkin has been Food Editor for The Wine News
magazine for twelve years. She writes a syndicated food column for the The Miami
Herald that appears in 400 newspapers across the country. She co-hosts the
weekly Food & Wine Talk program on WDNA 88.9 FM in Miami. She is also food
editor for The Coral Gables Gazette. Miami Metro magazine selected her as “one
of 101 women to watch” in 2001 in the food and hospitality profession.
Carole compiled the first Miami/South Florida Zagat
Restaurant Survey and was co-founder and chairman of the South Florida Chapter
of The American Institute of Wine and Food . She is a regional judge for the
James Beard Foundation Awards and on the nominating committee for the Slow Foods
Awards, and is charter member of the Miami chapter of Les Dames d’Escoffier.
Carole and Kathy Martin are co-authors of MMMMiami--Tempting Tropical Tastes for
Home Cooks Everywhere (Henry Holt, New York). Carole is also manager of The
Cooking School at Ocean Reef Club, a private club in Key Largo, Florida.
Carole grew up in Miami and has been reporting on the
development of " New World Cuisine" for more than ten years. Her culinary
vision, developed over the years, brings a unique style to her writings about
food and travel.
I grew up in Miami eating juicy mangoes naked in the
bathtub. But I never thought I could cook with them until the 1960's when
Florida's doors were opened to a flood of immigrants from South America, Latin
America and the Caribbean who brought with them their treasured recipes......now
we have mango tarts, fish served with mango sauce, cold milk shakes made with
mangoes, mango chutney......the list goes on.
